Cakes and More Cakes!

This is a basic cake recipe that you can be creative with.  Add lemon zest and juice,  popply seeds, decorate with nuts, chocolate, cherries, coconut, etc….  Or just put in cupcake casings.

Basic Yellow Cake
¾ cup butter softened (170 grams)
3 eggs at room temperature
2 ½ cups all-purpose flour (I use sponge flour) (320grams)
2 ½ tsp baking powder
½ tsp salt
1 ¾ cup sugar (320 grams)
1 ½ tsp vanilla
1 ¼ cups milk (10 fl. Ounces.)
 Cream butter and sugar
 Add eggs one at a time
 Sift dry ingredients together
 Combine milk and vanilla
 Add dry ingredients and liquid alternatively to creamed butter and sugar.
 Place in lined tins – Can use 2 round 8 or 9 inch cake tins or 3 1lb loaf tins
 Bake at 150 degrees centigrade until done.
*To turn this into lemon and poppy seed cake, I just add the zest of one lemon and some poppy seed. You can top the cake with a lemon drizzle icing if you choose.
